What makes Good Days? Good days.

“Good Days is more than a brand—it’s a mindset for me and my team. Anytime we’re able to make food from our heart and serve to people we cared about, it was a ‘Good Day’”.
– George Van Riper, owner

Founded in 2020, the name “Good Days” is what owner and creator George Van Riper thought about when good days were hard to come by. In the height of the pandemic, George conceptualized Good Days Pizza by experimenting with dough recipes. By trial and error, he finally found the perfect combination of flour, water and yeast to make a light, airy, flavorful dough.

Good Days Pizza is a pop-up pizza concept in Palm Beach, Florida, providing private catering services to customers seeking fresh, delicious, and authentic pizza. How we dough it.

Detroit/Sicilian dough

This dough is extremely hydrated at 75% water, giving it the appearance of a deep dish crust. Proofed for 72 hours, then par-baked in 8” x 10” Lloyd Pans, this Detroit-style pizza dough is thick, crispy, airy, and flavorful.

Neo-Nepolitan dough

Our Neapolitan-style dough is fermented for 72 hours using 00 flour and poolish, a highly fluid yeast-cultured dough starter, making our dough easily digestible, light, airy, and fragrant.
